A delicious gluten free mix for light and fluffy pancakes. Simply add milk, oil and egg. This mix can be adapted to be egg and dairy free and can be used as a base mix for waffles.

white rice flour, potato starch, sugar, buckwheat flour (buckwheat grits), corn starch, organic brown rice flour, baking powder, sea salt, flaxseed.
How to Use
*Follow the manufacturer's instructions for egg substitution.
- 1 ½ cups pancake mix
- 1 large egg (or egg substitute*)
- ¾ cup milk (or non dairy alternative)
- 1 tbsp vegetable oil
- 1 tbsp sugar or sweetener (optional)
In a large bowl, combine ingredients and whisk until lumps disappear. For best results, do not over mix. Let batter stand while pre-heating non-stick griddle or pan to medium high temperature (375°F). Lightly grease the grill with oil or non-stick baking spray. Adjust the temperature of the grill if needed. Adjust batter by adding more pancake mix or milk, one tablespoon at a time. Flip pancakes when top is showing bubbles and bottom is golden brown. Turn pancakes only once.
For waffles, add one additional egg and one additional tablespoon of oil.
Recipe makes approximately eight 4-inch pancakes. Bag yields approximately 44 4-inch pancakes.
